FRAGNANT CURRY “BLACK EYE”
- 1 cup of Black eye beans Krina
- 1 tsp cumin seeds
- 1 tsp of coriander seeds
- 1 tsp fennel seeds
- 1/4 tsp fenugreek seeds
- a pinch of cinnamon
- 2 tbsp. chili
- 1 tablespoon yellow mustard seeds
- 1 onion
- 1 tsp ginger
- 2 curry leaves
- 2 cloves of garlic
On first reading, the recipe is complicated, but this is mainly due to the various spices and ingredients you need. Ensure that your efforts will be rewarded.
Boil the Black eye beans Krina, add salt and drain.
Lightly chop some of the beans with a fork. Cook the cumin seeds, coriander seeds, fennel seeds, fenugreek seeds and a pinch of cinnamon in a pan for 2-3 minutes.
Grind the spices and add chili. Heat the oil in a frying pan and fry yellow mustard seeds, cover and wait until they break add the onion, ginger and curry leaves, garlic, pour the beans and the mixture of spices in 500 ml water, salt and cook for about 20 minutes.
Decorate with pieces of coconut and serve over cooked Basmati rice Krina. Bon appetite!
