We recommend that you soak the beans in cold water for 8-10 hours before cooking. Dispose of the water, wash the beans and boil in fresh water. Whem the water starts boiling let them cook for about a minute, then strain the beans, discard the water, pour cold water again and wait for it to boil. Hot and cold soaking reduce the possibility of formation of substances irritating the stomach lining and reduce the cooking time. Since beans are rich in proteins it is better to cook them on low heat with the lid closed. High temperature may harden the grains and they will not soften even after prolonged treatment. Add salt and tomatoes 5 minutes before removing from the heat. If you put them it the beginning, this may extend the cooking time. The cooking time is calculated from the time of boiling.
